Powtoon is indeed a pretty great tool to create fun presentations and videos. In the education version, you can assign an account to each student (with a link to access their account) and everything is centralized on the teacher account for follow-up. The only downside is that you cannot work on a video with several people: you then have to export each part and edit with another tool.
